Chicken curry

Serves 8

250 g Onion
Chop the onions finely
4 tsp Cumin
2 tsp Turmeric
1 tsp Chilli powder
25 g Fresh ginger
10 seeds Cardomom
1 stick Cinnamon
2 tbsp Cooking oil
Heat 50ml cooking oil in a frying pan
Fry the spices for 1 minute
Add the chopped onions
Soften the onions, stirring continuously
Transfer the onions to a large pan an set aside
1 kg Chicken breast
Slice the chicken into 1-2cm cubes
Fry the chicken 250g at a time until orangey brown
Put in with the onions
1 kg Tomatoes
50 g Tomato paste
500 ml Coconut milk
Add the tomatoes, paste an coconut milk
Simmer for 1 hour
